Cook With Me: Elderflower Bread

Eating healthy and delicious food – besides fitness – is my absolute jam! I just love to eat but I don’t love to eat everything. Not so with this incredibly yummy elderflower bread recipe. The perfect moist but yet fluffy texture is something I just can’t get enough from.

I’ve always been a very picky eater, at least that’s what my entire family always tells me. I don’t agree at all. It’s just that I have very high standards when it comes to what I put into my body. My body is my temple after all, and it has to provide me shelter for a couple of years to come so I might as well treat it right.

Nevertheless, I’m always looking to introduce my tastebuds to new flavors and textures. Sometimes a gurl just needs a little change of (food) scenery. If you know what I mean. That’s when I turn to Pinterest (you know my all-time favorite search engine) to look for new inspo.

Since I always have so much fun thinking of new recipes or adding my healthy dust on regular ones, I thought I’d take you along on my kitchen experiements.

That’s how the idea for my new YouTube series called ‘Cook With Me’ came about. Once a week, you get to join me in my kitchen as I wipe up a new healthy recipe creation.

We are starting off with Elderflower Bread!

During quarantine baking Banana Bread was all the rage. As much as I love a good old Banana Bread, I wanted to try something new (you know as an MG I get bored easily). Then I saw elderflowers blossoming all around me and first thought I wanted to make elderflower syrup. But then I realized just how much elderflower blooms you needed for that (like a craaazyyy amount!). That’s when I thought of turning the blooms I had into elderflower bread!

The star of the show is definitely the banana flour I used for the first time. I came across banana flour via popsugar.com and was surprised to find out that it’s also available in Germany (it usually takes a few years before food trends make it over the big pond).

Elderflower Bread

Elderflower blooms give the classic banana bread recipe a creative new twist.

  • 2 cups oat flour ((or simply ground rolled oats))
  • 1 cup banana flour
  • 1/2 cup natural coconut yoghurt
  • 1/2 cup maple syrup ((add more if you want it a little sweeter))
  • 1/3 cup apple sauce
  • 2/3 cups egg whites ((or add 1 large or 2 medium sized eggs))
  • 1/2 cup unsweetened coconut milk ((I love Nilk))
  • 1 pck. baking powder
  • 1 handful elderflower blooms
  • 1/4 tsp salt
  • 1 tsp vanilla paste ((you can also use vanilla extract))
  1. Preheat the oven to 350°F/170°C,

  2. Mix all dry ingredients in a large bowl.

  3. Add wet ingredients and the elderflower blooms and mix until you receive a smooth batter. Love to use my Kitchen Aid for this.

  4. Add a little bit of coconut oil to a 8×5-inch laof pan. Pour batter into the pan.

  5. Bake for 50-55 minutes or until a toothpick comes out clean.

  6. Remove the pan from the oven and let it cool for 15 minutes. This lets the bread set a little bit.

  7. Serve warm with natural peanut butter and your favorite jelly. For a savory version, simply add avocado, tomatoes or a fried egg.

Soooo good with natural peanut butter and jelly!

  1. I feel like anything elderflower is so foreign to Americans. Ever since I started traveling to the UK I have been HOOKED. Always a good flavor. Thanks for sharing!
